the solution is do not use filevault. it was meant to encrypt a real mac using apple hardware not your Frankenstein.

do you see a new install volume at the clover prompt? if you do you have to select it to complete the install.

at bios A18 dell - Updated suspend/resume protections maybe it is related to your issue.

what dell bios version are you on A26 seems to be latest

have you tried from the apple trackpad prefpane to make adjustments? frankly I did not think that the E7250 was even capable of those gestures.

you have to edit the info.plist inside the trackpad kexts manually.

make sure to have apfs driver loader and hfs drivers in your clover. if your hdd is nvme then you might also need that driver as well

we do not know what wifi you have therefore we cannot determine if it will work. what laptop model and make is it? what wifi?

you need both BT and wifi to work native as internal devices. also sometimes you need to log out of icloud and back in.
