It saves a screenshot to /EFI/Clover/misc post the image here In your Clover install log, I could see both Macintosh Sierra & Macintosh HD, I assume Macintosh HD is the El Capitan install? The Config file points to theme Latitude. The wallpaper above definitely is something else. So the 3rd selection is Macintosh Sierra, what is the first selection on the left?
