The touchpad is an Alps touchpad, so you could try 1Revenger1's VoodooPS2Controller which should support v7. Dr.Hurt's version might not support it but you could try that too. As for the Battery red status, just uncheck / recheck Show Percentage -
did you enable Legacy Option ROMs in the BIOS? Post your files so we could examine them What version of Clover? What version of OC?

As posted in my guide, it's a known issue and there's a workaround. Just put system to sleep and then wake it up. Brightness control with Fn+F11 and Fn+F12 should work with my files but make sure it's using VoodooPS2Controller. With ApplePS2Controller, it doesn't work.

The system specs is almost identical to the E7270. Give my E7270 files a try. You'll need to add the Intel / BT kexts and remove the Broadcom kexts I have -

If you have a working Catalina, then you should be a able to update to Big Sur by updating the OC files and kexts, and of course the Config file with the changes that are in the latest OC 0.6.4. Post your working OC files if you need assistance to check -
It can't find these 2 ssdt because you moved them to a folder - SSDT-UIAC-USBX SSDT-UIAC SSDT-Z370-USBX either disable them if you don't need them or moved them out to ACPI

From the files you attached, you should be able to control brightness with Fn+F11 and Fn+F12. It's probably issue with NVRAM Try testing from terminal. If you don't get an output after the second command, then NVRam is not working sudo nvram test=NVRamDetected sudo nvram -p | grep 'test' Also the SSDT.aml is not for your system, it's for an i5-6300u. Also you don't need it since it's already have pluginType enabled in the Config file -
Download ACPIBatteryManager.kext, place it in /EFI/OC/Kexts In the Config file, under Kernel/Add, find SMCBatteryManager.kext and disable it Add ACPIBatteryManager.kext to Config file under Kernel/Add. Use ProperTree.app if you're familiar with it to add Save and reboot

Hibernation doesn't work well in Hackintosh. Backlight should work, that kext has been integrated into Whatevergreen a long time ago. I wouldn't upgrade Clover beyond 5119 as you have now. It'll run Catalina just find, unless you plan to install Big Sur, then I suggest go with OC. Newer version of Clover breaks all sorts of thing or won't boot at all, maybe 5126 or newer but I have not use beyond 5119. As for new Lilu.kext, you can place it in the Off folder then you can test it during boot. At clover, press the spacebar to select block or unblock kexts. There you would block Lilu from Other and allow Lilu from Off and see if it'll boot.
